TASTING NOTES:
View: Deep ruby.
Nose: a subtle nose of ripe black fruit, soft licorice, plum and stone fruits.
Mouth: spicy, elegant, soft tannins surprisingly.
APPELLATION: Gigondas.
GRAPES: 95% Grenache and Syrah 5%.
AGEING: matured for 18 months, 12 months in French oak barrels (228l and 600l of semi-muids).
PREPARATION: grapes stemmed and crushed, the grapes entered stainless steel tanks by gravity in the cellar. The evaluation period lasts about a month and includes pumping cold fermentation, alcoholic fermentation at about 28 ° C with daily delestage and lees maceration and careful pumping. Malolactic fermentation ends in mid-November.
