Terroir :
The Orb Valley, in which Mas la Chevalière is located, has various landscapes coming one after another, and they have been all shaped and cultivated for centuries. Vine has been paramount since the Antiquity and the well-designed plots have structured slopes, offering the best conditions for a wide range of grape varieties. If this place is famous for water springs, the Valley of Orb has a perfect microclimate to ripen grapes without losing balance and freshness. White wines are fruity and nervy, red are supple and intense.

Vinification and maturation
12 days of fermentation at 26-28°C with daily pumping over in stainless steel tanks. 100% malolactic fermentation.
6 months ageing in stainless steel tanks. Bottling with minimum filtration to preserve natural character.
6 months ageing in stainless steel tanks.

Vintage Report :
A year with an exceptionally rainy spring, especially in May and June. The sanitary pressure was quite high but in the end, it evolved favourably thanks to a hot summer but without excess due to the sea entrances. There were few days with temperatures above 30°C. Since the end of June, rains have stopped, and the presence of wind has helped to reduce the pressure of mildew in certain fragile areas. This is an early vintage as the year has been hot since January. The harvest finally began on August 14th at Mas la Chevalière, 6 days ahead of 2019. The earliest chardonnay grapes were the first to go through the doors of the winery. The rains at the end of August and the temperature differences between day and night were favourable to the phenolic ripening of the reds. Conclusion: This vintage will be balanced for both the whites and reds, with in particular a very good ripeness on the Pinot Noir.

Tasting :
Appearance : Bright ruby colour.
Nose : Ripe and pulpy cherry aroma on the nose.
Palate : Juicy mouthfeel combined with supple, velvety tannins.
Enjoy it with salt crust baked chicken, stuffed mushrooms or soft cheese.
