Bruno Prats, owner and winemaker of Cos d’Estournel until 1998, and Paul Pontallier, winemaker of Château Margaux until his premature death in 2016, had been looking for the perfect location for a Chilean estate since 1984. In 1990, they struck gold, with this site in the Maipo Valley, just down the road from Santiago, and planted Cabernet Sauvignon vines. And they’ve since branched out, to the cooler Malleco valley, the perfect place for growing Chardonnay, where the wines reach perfect ripeness, but retain freshness. This is rich and buttery, but doesn’t lack acidity, making it the perfect match for roast Chicken.
