One of the latest projects of the dynamic Silva family is the vineyards in Paredones, in the hills near the coast, just 8 kilometers from the ocean. When you drive here you can feel it getting cooler. The difference is enormous. During the day it never gets warmer than about 26 degrees Celsius, which is exceptional for Chilean standards. Ideal for pinot noir, a grape that only thrives in very cool conditions. This produces a wine with the complexity and subtlety unprecedented for Chilean pinot noir. The grapes are harvested by hand, usually in the first week of April. Upon arrival, the grapes are selected by hand, to use only the best fruit. First, a cold soaking of no less than 12 days follows, at a temperature between 5 and 8 degrees. This gives the wine color and fruit. The wine then ferments for three weeks at fairly low temperatures, between 24 and 28 degrees, also to optimally preserve the fruit. Aging takes place in French oak barrels of two years old, for 12 months. Elegant style, beautifully typified pinot noir, strawberries and cherries, smoky and broad, good freshness, tension, tasty, earthy, fine acidity, well-made, beautiful finesse. Delicious with a beautiful game pâté, duck, dishes with veal, green salads with pieces of smoked bacon.
