For the Chardonnay, vineyards were chosen at the foot of the Simonsberg and the Helderberg. These are the cooler spots of Stellenbosch, close to the sea and at an altitude of most above 200 to 300 meters, making the wine with its natural acids. This is one of the finest terroirs in South Africa, where the chardonnay becomes very intense and aromatic, but not overripe.
