Dark Horse winemaker, Beth Liston, believes that fortune favours the bold. Her pioneering approach to viticulture and winemaking champions originality and above all, taste. The grapes for Dark Horse Merlot were harvested at optimum ripeness, which allowed for easy extraction of rich colour and velvety tannins.

The winemaker selected aromatic yeast strains and employed a warm fermentation process, which has resulted in a wine with more flavour and fruitier aromatics. Proper storage after fermentation has helped to build complexity on the palate and bring a nice balance to the wine. This Merlot is a bold wine featuring aromas of dark jammy berries integrated with toasted nutty oak. In the mouth, these notes are supported by a plush mouthfeel, full body, and good tannin structure.
