This is the true Kyoto sake! 100% Using special rice called Kyo-no-kagayaki(means Kyoto's brightness). Slowly fermented at low temperatures in small batches. Lightly herbaceous with hints of pear and apple. Good acidity and a medium-dry finish. Serve with dishes that are lighter in flavor, such as lean chicken dishes, light fish, sashimi, ceviche and shell fish. Enjoyed chilled.
