The vineyard in Los Lingues, at the foot of the Andes, at some altitude, enjoys great temperature differences between day and night. The daytime temperatures are also much higher here during the day than on the coast, in Paredones. But the mountain wind and the altitude cool off the vineyard in the afternoon and evening. This makes it not only the estate's best vineyard for Cabernet Sauvignon, but also for Carmenère. And you can taste that in this wine, which is wonderfully intense, broad, real Gran Terroir de los Andes. The grapes are harvested by hand in the second, third week of April. Then follows a cold soaking of eight days at 6 degrees. Fermentation takes more than two weeks, at a temperature of 27-28 degrees. Then another ten days on the skins, for more depth and color. 80% of the wine is aged in French oak barrels for 10 months. The rest remains on stainless steel. Beautiful aroma, intense, deliciously sweet fruit, cinnamon, sweet cherries and plums, figs and vanilla, soft and tasty, ripe and full, delicious glass, beautiful tannins, length. Ideal with grilled ribeye, oven-baked lamb roulade, pepper steak, mature cheeses.
