The Apothic winemaking team exercised meticulous temperature control throughout the winemaking process. As fermentation progressed, winemakers managed heat spikes to maximize the extraction of fruit flavours and colour. Post-fermentation, the wine was aged on oak staves to enhance the sweeter notes of vanilla, mocha, and toffee, which give Apothic its distinct and memorable character. Apothic Red features notes of black cherry and dark fruit. Hints of vanilla and mocha layer together and support the elegant structure of this delicious blend.
